breakfast strata [food]

I like this recipe because it's fun, easy, and malleable.  Sorry, no pictures, I can't find my camera. emot-frown

Ingredients:
12 eggs
approx. 8 slices of bread, preferably stale
1 cup milk
1 tbsp dry mustard
2 cups grated cheddar cheese
8 oz. sliced mushrooms
1 lb. chorizo
1/2 cup dried onions (fresh work fine, too)

Directions:
Cook the chorizo in a skillet on the stovetop until it browns.  I wish I could be more specific about the time, but it varies.  Drain and dry the chorizo with paper towels.  Lots of paper towels.

Beat the eggs with the milk in a large mixing bowl

Tear the bread into one inch pieces and add to the bowl, along with all other ingredients

Mix well

Pour mixture into a glass baking dish, 2 Liters is a good size.  Cover.  If it looks vomitous at this point, you're probably doing it right.

Let the mixture sit on the counter for two hours, or preferably overnight in the fridge.

Preheat oven to 375F degrees

Bake strata for approximately 1 hour, checking occasionally after the first thirty minutes to prevent burning

Enjoy.

The result should fall somewhere between a bread pudding and a souffle in consistency.  If you want to do something fancy, you can lay the whole slices of bread in the pan and pour the rest over them.  That's where the name actually comes from.  Some people use cream cheese, but you won't likely find that in my kitchen.

Alternatively, leave out the last five ingredients, and this dish has many possibilities.  After all, the base is just eggs, bread and milk, so you can do whatever you want with it.  Anyway, this isn't exactly a gourmet dish, but it is amazingly easy and delicious.
