Pine trees can be symbolic, too.
They're usually used as Christmas trees, which can be related to the birth of the savior Christ, who could symbolize Utena. So pine trees symbolize Utena. That's why Akio likes to have them in his car. 
Edit: After four posts, and even a picture, I have to mention that I have no idea why I'm going crazy with the concept of pine trees.
