Oh, how I'm beginning to love it. I don't have to go to school so damn early right now, and the first thing I did in the morning was...MAKE MYSELF A BREAKFAST PANINI!
This easy to make (but with moderate cleanup) sandwich is just pure win. Instructions:
Gather/chop your ingredients. The basic ones are eggs (2), easily spreadable butter, and bread (2pcs). Easily spreadable butter can be whipped butter or regular butter warmed in the microwave.
In addition to these, I add 2pcs bacon, chopped (Cosco sells precooked bacon, which saves effort). You could substitute bacon bits, probably around 1/4c or however many you want. Also, I add cheese (mexican mix, pre-shredded) and green onions. The sandwich in the cafeteria I ripped off has tomatoes in it, but I think those are icky. Be creative, add whatever you want!
Set up two pans, one of which is big enough to hold two pieces of bread in it, the other which has a clean bottom. Turn both burners on. Spread butter on one side of the bread, lay that side on the pan, then butter the other side while that's in the pan. Repeat for the other piece. Leave those to cook while you scramble two eggs in a bowl, dump them into the other pan, followed by whatever else is going on your sandwich. Swirl around, flip, etc, until the egg is cooked through.
Check your bread periodically. At this point, it should be just slightly brown on the one side and buttery on the other. Flip one piece over, load it up with the egg and stuff mix, then put the toasted side of the other one on that (so both bread pieces are uncooked, buttered side out). Turn off the egg pan, pick it up, and put the bottom of it on the top of the sandwich and press down. This is the "panini" bit. Hold it down until you think the other side of the bread is cooked (should be golden brown), then flip bread and repeat.
When both sides are golden brown, remove, enjoy
